Broccoli + Cabbage Caesar


This is not-your-grandma's typical caesar salad. We swapped out traditional romaine lettuce for shredded cabbage and broccoli for a Loli's twist on a classic salad! Get the recipe below!


Broccoli + Cabbage Caesar


Ingredients

  • 3 Tbsp. grated Parmesan, plus more shaved for serving
  • 2 medium heads of broccoli (about 1 1/2 lb.)
  • 1/4 head of savoy or Napa cabbage
  • Finely grated lemon zest (for serving)
  • Freshly cracked black pepper
  • 1 jar of Capers, drained
  • ¾ avocado oil, for frying capers
  • Loli's Caesar Dressing

Capers:

  1. Pour oil into small saucepan to 1/8 inch deep
  2. Heat oil until simmer or 350F
  3. Drain capers and dry on paper towels or kitchen towels
  4. Add capers to pan without overcrowding, in batches if making a large quantity
  5. Fry until golden brown, about 2-3 minutes.

Salad:

  • Trim and Peel broccoli stems to expose tender inner cores. Cut off florets as close to the dark green flowers as possible and break into bite-size pieces. 
  • Starting at the floret ends of the stems, then slice very thinly crosswise. 
  • Thinly slice cabbage crosswise (you should have about 2 cups). 
  • In a large bowl toss until broccoli and cabbage are combined evenly and coat with dressing; season with salt and a few healthy dashes of pepper..
  • Top salad with shaved Parmesan, lemon zest, and crispy capers
