Broccolini with Marcona Almond Breadcrumbs + Caesar Drizzle

We are a part of the Erewhon Market May Members program and we are *really* excited. We decided to put grab some of our favorite ingredients (broccolini, ftw!) on our latest trip to Erewhon and whip up a side-dish that will be the favorite of any crowd. The marcona almonds give a rich, nutty flavor while the caesar and breadcrumbs give the perfect umami and crunch. Grab the recipe below!

Ingredients


Breadcrumbs

  • 4 tbsp salted butter
  • 1 cup panko bread crumbs
  • ⅔ cup Erewhon Marcona Almonds
  • 1 tsp garlic powder
  • Pinch of salt and pepper

Broccolini

  • 2-3 large bunches broccolini
  • 1 tbsp olive oil
  • Pinch of salt and pepper
  • Loli’s Caesar Dressing, to drizzle

Directions

  1. Place the marcona almonds into a food processor and pulse until a breadcrumb consistency is reached. 
  2. Heat a large skillet over medium heat and add the salted butter. Once melted, add the breadcrumbs and crushed marcona almonds, followed by the garlic powder and a pinch of salt and pepper. 
  3. Saute for about 5 minutes, stirring frequently, until golden brown and crispy. Set aside. 
  4. Toss the broccolini with the olive oil and a pinch of salt and pepper. 
  5. Heat a grill pan over medium high heat. Once hot, add the broccolini to the pan and cook for about 3-5 minutes per side, or until desired tenderness is reached. 
  6. Plate the cooked broccolini and drizzle with a generous amount of Loli’s Caesar dressing. 
  7. Sprinkle with a generous amount of the breadcrumb mixture + serve immediately. Enjoy! 

Note: You could grill the broccolini on a grill over medium heat, for the same amount of time. Alternatively, you can roast the broccolini at 425 degrees for 10-15 minutes until tender.
