Ingredients
- 1 lb russet potatoes, scrubbed and cut into fries
- 2 tbsp avocado oil
- 1 tbsp cornstarch
- Pinch of salt and pepper
- 1/4 cup freshly chopped parsley
- 1/4 cup grated parmesan cheese
- 2 large cloves garlic, finely minced
- Loli's Probiotic Ranch Dressing, to serve
- Loli's Probiotic Green Goddess Dressing, to serve
Directions
- Place cup potatoes in a large bowl and fill with water to submerge potatoes. Let it soak for at least 30 minutes to an hour
- Preheat oven to 450 degrees Fahrenheit and line a large baking sheet with parchment paper
- Drain starchy water from the potatoes and pat the potatoes dry. Toss potatoes with avocado oil, cornstarch and a pinch of salt and pepper
- Lay potatoes on the prepared baking sheet in a single even layer. Transfer to the oven and bake for about 15-20 minutes, flipping halfway, until the potatoes are fork tender and golden brown. Broil on high for 2-4 minutes, if desired for further browning
- In a small bowl, mix together the chopped parsley, parmesan cheese and minced garlic
- Plate fries on a serving plate and top with the parsley pamesan mixture. Sprinkle with an extra pinch of salt if desired. Serve with the Ranch and Green Goddess as a dipping sauce and enjoy!
