Green Goddess Mac and Cheese

Ingredients

  • 1/4 cup butter
  • 1/4 cup all purpose flour
  • 2 cups whole milk
  • 1/2 cup Loli's Probiotic Green Goddess Dressing
  • Salt and pepper as desired 
  • 1 cup shredded white cheddar cheese
  • 1 cup shredded gouda cheese
  • 1 cup shredded gruyere cheese
  • 1 lb elbow macaroni or cavatappi noodles
  • 1/2 cup toasted breadcrumbs - optional 

Directions

  1. Heat a medium saucepan over medium heat and add butter
  2. When butter melts and starts bubbling, sprinkle in the flour and a pinch of salt and pepper and whisk until well combined. Cook 2-3 minutes, stirring often to make a rue
  3. Lower heat to medium low and slowly whisk in the milk until well combined. Bring to a simmer and cook for about 3-5 minutes, stirring occasionally, until slightly thickened
  4. Stir in Green Goddess dressing and shredded cheeses and bring to a low simmer. Stir often until the cheese is melted and the suace is nice and thick - about 3 minutes
  5. Meanwhile, cook the pasta according to package directions, until al dente 
  6. Stir the pasta with the sauce until well combined and all the noodles are coated with sauce 
  7. Serve with toasted breadcrumbs on top if desired and enjoy!
