Green Goddess Salmon Bowls

Looking for an easy family dinner idea for Friday evening? Salmon bowls dressed with our delicious and fresh Loli's Green Goddess is the perfect family recipe. 

Ingredients: 

  • 2, 4oz salmon filets, skin on or off (to your liking) 
  • 1 tsp of avocado oil
  • Salt and pepper
  • 2 cups of arugula 
  • 1 cup of cooked pearl couscous
  • Fresh dill, to serve
  • Fresh parsley, to serve
  • Loli's Green Goddess dressing, to serve
  • Pickled onions, to serve - optional

Directions: 

  1. Season the salmon with salt and pepper. Heat the oil in a large cast iron or nonstick skillet
  2. Once hot, place the salmon in the skillet skin side up for about 4 minutes until golden. Carefully filp and cook for another 3-5 minutes or until cooked through to your liking
  3. Place a cup of arugula in each bowl, followed by 1/2 cup cooked pearl couscous
  4. Place a salmon in each bowl, then garnish with fresh dill, parsley and a generous drizzle of Loli's dressing
  5. Serve immediately to the kids and bon appetite!
