Grilled Corn, Zucchini, & Arugula Salad


  • 2 medium zucchinis, halved
  • 3 cobs corn
  • Oil, to grill
  • Pinch of salt and pepper
  • 4 cups arugula
  • 2-3 green onions, chopped
  • 1/2 cup crumbled goat cheese
  • Loli's Probiotic Lemon Garlic Vinaigrette


  1. Grill zucchini and corn. Heat grill to medium high heat. Oil the zucchini halves and corn cobs. Season with a pinch of salt and pepper. Place the corn cobs on the grill and cook for 5 minutes per side or until golden brown. Rotate to cook all sides. Place zucchini halves on the grill and let it cook for 3-5 minutes or until golden brown. Flip and cook for another 3 minutes or until golden. Remove and let everything cool slightly while preparing salad
  2. To a serving bowl, add arugula, green onion and goat cheese. Once cooled, cut the corn kernels off the cob and add to the bowl. Dice the zucchini into small pieces and add to the bowl
  3. Drizzle with desired amount of Loli's Lemon Garlic Vinaigrette and toss to combine. Taste and adjust vinaigrette amount to taste
