Sundried Tomato Chicken Salad Pitas

Ingredients - serves 4 

  • 1 lb cooked chicken breast, shredded
  • 1/2 cup sundried tomatoes in oil, finely chopped
  • 1/3 cup Loli's Green Goddess Dressing
  • 1 tbsp capers, roughly chopped
  • 1/2-1 lemon, juiced
  • 1 tsp fresh lemon zest
  • 1 tsp honey
  • Pinch of salt and pepper
  • 4 pitas 
  • Arugula - as needed


  1. In a medium mixing bowl, combine the cooked and shredded chicken with the chopped sundried tomatoes, green goddess dressing, capers, juice from 1/2 lemon, lemon zest, honey and a pinch of salt and pepper. Toss to combine. Taste and add more freshly squeezed lemon if desired 
  2. Heat the pitas on a grill pan over medium heat. Once warmed, place a generous handful of arugula onto the pita, followed by 1/4 of the chicken salad 
  3. Simply fold and enjoy!
