Ingredients - serves 4
- 1 lb cooked chicken breast, shredded
- 1/2 cup sundried tomatoes in oil, finely chopped
- 1/3 cup Loli's Green Goddess Dressing
- 1 tbsp capers, roughly chopped
- 1/2-1 lemon, juiced
- 1 tsp fresh lemon zest
- 1 tsp honey
- Pinch of salt and pepper
- 4 pitas
- Arugula - as needed
Directions
- In a medium mixing bowl, combine the cooked and shredded chicken with the chopped sundried tomatoes, green goddess dressing, capers, juice from 1/2 lemon, lemon zest, honey and a pinch of salt and pepper. Toss to combine. Taste and add more freshly squeezed lemon if desired
- Heat the pitas on a grill pan over medium heat. Once warmed, place a generous handful of arugula onto the pita, followed by 1/4 of the chicken salad
- Simply fold and enjoy!
